Which cover crops are ideal for a fall garden in my area?

I'm really looking to enhance my soil health for next spring, and I’ve heard that planting cover crops in the fall can be a great way to do this! I live in a temperate climate, but I'm not sure which cover crops would be the most beneficial. I’ve considered planting clover or rye, but I'd love to know if any specific varieties are particularly suited to my local conditions. Also, how late can I really plant them before the ground gets too cold? I’m eager to keep my garden actively contributing to the ecosystem even during the fall and winter months! 🌍🌾
