How do I choose the right plants for a Japanese garden in my climate?

So I'm trying to figure out which plants would thrive in my Japanese garden, especially since I’m based in a temperate climate. I've spent a lot of time growing tomatoes and herbs, but I want to branch out into more ornamental plants that would fit the Japanese aesthetic. I've already looked into common ones like azaleas and Japanese maples, but I'm confused about how they’ll adapt to my specific conditions. Are there any particular varieties that would be more resilient? I'd love some recommendations on plants that not only look good but can handle fluctuations in weather, and if you have tips on their care, that would be awesome too!
