How can I effectively use my polytunnel for winter gardening?

I'm really excited about the idea of extending my growing season with a polytunnel, especially since I love my rooftop garden! I live in a desert climate, and while my summer crops do great, I find the winters can be quite harsh on my plants. I’ve been thinking about setting up a polytunnel to help with this, but I’m not quite sure how to make the most of it during the winter months. I've tried a few cold-hardy veggies before, but they didn’t thrive as expected. My setup has good exposure to sunlight, but I worry about temperature drops at night. Can anyone suggest specific crops that can thrive in a polytunnel during winter in my climate? Or are there any special techniques I should consider to keep my plants happy? I’d really appreciate any tips or advice! 🌱❄️
