How to avoid nitrogen depletion from my mulch choices?

I'm managing a small but diverse balcony garden in Paris, where I've been focusing on organic fruit tree cultivation. Recently, I've been mulching with grass clippings and dry leaves, but I've read that certain mulches can lead to nitrogen depletion in the soil as they break down. Given that my citrus trees thrive on nitrogen-rich soil, I'm worried about the long-term effects this might have. I've noticed some yellowing leaves, which makes me suspect a deficiency. Can anyone advise on how to balance my mulch choices to maintain healthy nitrogen levels? Should I incorporate additional nitrogen sources to counteract this effect, or are there types of mulch that are less likely to cause depletion?
